Besides the vitamins contained by vegetables, the main benefit that we have from the raw vegetable juices is the quality of water.

We can say that water from vegetables is perfectly natural that suits our body needs. This water is less irritating than tap water.

Vegetable juices should be diluted preferably with distilled water. Some herbs contain pigments such as carotene from carrots that may give to skin a yellowish tinge.



Green juices, especially parsley, spinach and other leafy green juices can irritate an inflamed intestinal wall, while beetroot juice can give a red tinge to urine. These juices should be used with special care.

Regarding the vegetarian diet I don't believe that we can live healthy without vegetables and fruit but we can't live only with them and enjoy to a well-balanced health.

A vegetarian diet is recommended only when the patient has eaten too much meat for a long time. It is recommended a vegetarian diet till his tissues will get rid of excess animal protein, then he must adopt a more natural diet with not too high meat, eggs and milk dosage.

It is desirable not to mix fruits and vegetables with other sweet foods during the same meal and not eat only one floury vegetable at a meal. Floury vegetables contain seeds, roots and tubers.

Some root vegetables such as carrots, parsnip, beets and turnips don't digest well when they are cooked because they tend to cause winds and acid fermentation.

Flour-sugar-protein combination is hard to be digested especially at sedentary people and it is a common cause of intestinal disorders and weight gain.

Preferably, vegetables should be prepared in water vapor or in very little water. If they are cooked too long, enzymes and vitamins are destroyed. Always utilize water from boiled vegetables as soup or as a simple drinking.
